Take 1 cup curd beaten
Prepare 2 tsp tamarind paste

For making the stuffing add oil, dhania, jeera and fennel seeds and roast them till the aroma is strong enough. This is what it makes our stuffing awesome and adds a North Indian tinge.Add onions, boiled potatoes and add the remaining ingredients except Besan and saute them with more oil till golden brown. Now add Besan and add prepare the stuffing as shown below.
Make small balls of the dough and add the stuffing in it, and deep fry all
Now for the final decoration make a hole in the Puri at the centre and to it add some beaten curd mixture in tamarind chutney and Jeera powder, crushed fried Papad Sev, Dhania,pomegranate and some more tamarind chutney.Add Surti Locho to the sides with crushed Papad and it's ready to serve.
