12. Take 50 grams Thai chilli paste (Nam Prik Pow)
13. Make ready 2 Tbsp cooking oil (vegetable oil or sunflower oil) for stir-fry
14. Take 1/2 Tsp Bicarbonate Soda (optional)
15. Take 1 Tbsp water

This is the Thai take on a dish that can probably be found at any Asian hole-in-the-wall eatery in the west. The soft, moist chicken meets the warm crunch of freshly toasted cashew nuts or, as they are called in Thai, the 'mangoes of the high forests of India'. Chicken with cashew nuts is one of my all-time favorites, as it is for my husband. It's a simple dish that's become a staple for the Thais and the farangs (Gai=chicken, Pad=stir fry, Med Ma Muang Him Ma Paan=cashew nut) Please, leave the name alone out of respect.

Instructions to make Stir-fried chicken and cashew nuts:

1. (This is optional) If you want your chicken to be soft as Chinese restaurant, you can follow this step. Marinate your chicken with bicarbonate soda for 15 minutes then rinse them thoroughly with cold water. Dry them with kitchen paper and leave them aside.
2. Marinate chicken with Soy sauce around 5 minutes.
3. Cut and prepare garlic, snow peas (mangetout), Onion (to chunks), bell pepper (Button), Spring Onion and Large Dry Chilli
4. Fry cashew nuts until golden and leave them aside
5. In small bowl, add soy sauce, oyster sauce, Maggi sauce, Sugar, Thai chilli paste (Nam Prik pow) and water. Mix them together and leave them aside
6. Heat up the pan, add a little oil in and cook the chicken until they are cooked and soft. Leave them aside.
7. Use the new pan, heat up the pan with 1 Tbsp of cooking oil. Fry large dry chilli until the colour's changed and smell nice. Take them out the pan and leave them aside. Keep the old oil.
8. Add the rest of cooking oil to the same pan, heat it up and add garlic in. Then add onion stir-fry them. Then add Bell peppers then Snow peas to stir-fry.
9. Add back fried large dry chillies and cooked chicken. Stir-fry them.
10. Add the mixed sauce to the pan. Then coat everything with the sauce. Add back cashew nuts.
11. Add Spring onion, stir-fry then turn off the heat.
12. It's ready to be served.

In a medium bowl, season the chicken with salt, pepper, and cornstarch. This spicy, easy stir-fry is all about the sticky, slightly sweet sauce that coats the chicken and cashews.
