Membrillo, a Spanish quince paste, is one of my go-to mates for cheese. And so yesterday, I decided to make some. I spotted this bountiful sight of a quince-laden tree outside my sister's window last week. Homemade Dulce de Membrillo (Quince paste).

Steps to make Membrillo (quince paste):
  1. Peel and cut the quince and the pear, in small pieces and place in a bowl. Cover with sugar and mix. Put a lid and let it set for the night. (Check before you go to sleep and add more sugar (5 tablespoons) and add the alcohol.
  2. Next day Blend it (also the liquid that the fruit let out through the nigt) untill all the pieces are completly blended. Cook it slowly and once is warm add the red wine and quickly stir so it takes colour.
  3. Let it cook slowly stirring from time to time. Once the paste follows when you stir it, quickly pour it in a tupperware and let it cool (do not cover)

Sweet and slightly tangy, this quince paste, also known as quince cheese, is a solid, sliceable jelly made from the quince fruit. It pairs deliciously with. paste ('dulce'). Wash the quince and cut into halves or quarters. Put in a large pot and cover with The membrillo is done when it's a beautiful, burgundy-wine red, and has a spreadable consistency. Dulce de membrillo or a sweet of quince is a sweet quince paste very popular in Spain.
