In order to avoid that, I substituted Orange Supreme cake mix, vanilla pudding mix, and used vanilla extract instead of lemon. Steps to make Orange Cake:
  1. Add oil and the prepared orange juice.
  2. With every little orange juice fold in some flour and stir until they are combined well.
  3. Add in the baking powder.
  4. Bake the cake at 180 C for 35- 40 mins or until a tooth pick inserted comes out clean.  The batter is baked in a tube pan or a bundt pan. The tube in the center of the pan lets the hot air circulate so the heat can reach the center of the cake. I usually keep a small steel container in my round pan since I don't have either of the above mentioned pans. It still works well for me :)
  5. Do not open the oven before 30 mins.
  6. Once you take out the cake from the oven immediately pour the orange juice and powdered sugar mix onto the hot cake. The cake will drink the entire juice up.  At this stage you are free to create pin size holes as well on the cake to make sure the cake absorbs the juice.
  7. Leave the cake to cool.

This vegan orange cake really surprised me. I didn't expect the color to be orange at all. Soft and fluffy orange cake with a tender crumb, melt-in-the-mouth texture, and bright orange flavor. Leave it plain for a simple, everyday snack, or drizzle with cream cheese glaze to turn it into dessert. For this super easy orange cake, just put all the ingredients in the blender and blend them away, that's how easy this recipe is.
