Instructions to make Mango Kulfi (no cook):
  1. Peel and cut the mango, put in a blender with milk
  2. Add condensed milk and blend it all together.
  3. Add cardamom powder and saffron strands.
  4. Add Malai or cream and blend again together.
  5. Pour in a container and freeze for 1-2 hours.
  6. When it’s half frozen, take it out and blend again or use a hand mixer.
  7. Pour in individual moulds or kulhads and freeze for 5-6 hours or until frozen.
  8. De mould and enjoy with chopped pistachios.

Indian mango kulfi is rich and creamy. Traditionally made by cooking milk for hours until it thickens. But, my version is a quick and easy no-cooking method using condensed and evaporated.
