  2. Take 1.5 cups Chopped veggies(onion, carrot, beans, capsicum, green peas) boiled

  8. Make ready 1 tsp Garam masala powder
  9. Make ready 1 tsp Red chilli powder or less as per taste
  10. Take 1/2 tsp Jeera

  12. Prepare 1/2 cup coriander leaves
  13. Prepare 1/4 cup Chopped mint leaves
  14. Take 1/2 cup Milk
  15. Get Few Saffron strands
  16. Prepare 1/2 cup Oil
  17. Make ready 2 tbsp Ghee
  18. Make ready As per taste Salt

The color looks appetizing and the taste is great! It's delicious served with mint chutney or simple, plain yogurt. Vegetable Biryani is a rich and exotic rice dish with spicy vegetables. The saffron aroma makes this dish very inviting.

Instructions to make Vegetable Biryani:
  1. Boil rice with salt and add the whole Garam masala at the same. Boil 70 percent only.
  2. For gravy take a vessel, add oil, jeera, tej patta, add chopped onion and Saute, add ginger garlic paste, once translucent add all the veggies and dry masalas.
  3. Now add tomato purée to the veggies, and cook till oil leaves on slow flame. Adjust salt, add curd,, and little water to adjust the consistency of the veggies, it should not be dry nor should be very thin.
  4. Fry the sliced onions for the barista.
  5. Finally to set the biryani, here all have different ways, I have done this way, add one portion of vegetables at the bottom, add rice, now here the milk you have add little Haldi(turmeric) for colour, as I don't Like using food colour and add kesar in it. Pour some spoons on the rice, add some barista, chopped dhaniya and chopped pudhina.
  6. Complete it with alternate layers. And top with melted ghee.
  7. Cover the lid tight with flour and keep on dum for 40-45 mins.. - Serve hot with mix. Vegetable raita..
